Soft chocolate muffins made with oats and mandarin, simple, aromatic, and full of mandarin flavour.
Ingredients
70 g dark chocolate (85% cocoa)
100 g rolled oats
1 banana
1 peeled mandarin
2 eggs
30 g honey (optional)
A pinch of salt
2 teaspoons baking powder
2 teaspoons liquid vanilla
1 teaspoon ground cinnamon
30 g ground almonds
To finish
50 g dark chocolate
2 mandarins, peeled and segmented
Preparation
- Preheat the oven to 200°C.
- Finely chop the dark chocolate and set aside.
- Blend the oats until they reach a flour-like texture.
- Add the banana, mandarin, and eggs and blend until smooth.
- Add the honey (opcional) , vanilla, salt, baking powder, cinnamon, and ground almonds. Mix well.
- Fold in the chopped chocolate gently.
- Divide the mixture into lightly greased moulds.
- Bake for about 15 minutes, until cooked through. Allow to cool.
To serve
Melt the remaining chocolate and decorate with mandarin segments and chocolate.
